
Khagina
Here’s how to make khagina, a perfect dish for a chilly winter morning or maybe for a quick lunch. Khagina is a name for scrambled eggs in Urdu language and it is made with tomatoes and traditional spices.

Ingredients
2 medium chopped onions
1 teaspoon ginger garlic paste
4 no’s of chopped green chilies
5 no’s of eggs
4 small chopped tomatoes
½ teaspoon red chili powder
½ teaspoon of cumin powder
1 teaspoon coriander powder
Ginger cuttings to garnish
Chopped coriander to garnish
Salt to taste
3 tablespoon oil
Recipe
Add 3 tablespoons of oil in a pan, add onion, and sauté them until translucent, then add ginger garlic paste, and salt. Add tomatoes, and chili powder and cook until tomatoes are mushy. When the curry starts to release oil then break the eggs on top mix slightly in the curry and leave it to cook for 2 minutes on medium heat.
Add cumin and coriander powder, give it a mix, and cover the lid for about a minute. Garnish with ginger cuttings and coriander. Your khagina is ready.
You can also have it roti or even rice as lunch but the combo with paratha is just so good. The taste is just exceptional and it has rich aroma also. Serve hot and Enjoy your meal !
