
Mango pancakes with vanilla ice cream
This mango season don’t forget to make these fluffy mango pancakes. Serve hot with Vanilla ice cream and toppings like nuts or fresh fruits. You will forget your Monday blues once you have them! Here is the recipe.
Ingredients
1 cup mango puree
1 cup all-purpose flour
2 tablespoons of sugar
2 teaspoons of baking powder
1 no of egg
Pinch of salt
1 cup milk
2 tablespoons of melted butter
1 teaspoon vanilla extract
Vanilla ice cream
Nuts or fruits of choice for topping.
Recipe
First, mix all the dry ingredients including flour, baking powder, salt, and sugar in one bowl, and then add all the wet ingredients like milk, vanilla extract, butter, and egg. Whisk them well and then add mango puree. Gently fold the mango puree in the mixture. Heat a non-stick pan, add butter and half a ladle of pancake mixture into the pan. Cook it until the bubbles appear on top and the pancakes are golden brown on one side and then cook it similarly on the other side for 2-3 minutes. Your mango pancakes are ready. Serve them warm with a scoop of vanilla ice cream, maple syrup, and toppings like nuts and fruits of your choice.
