· Ingredients
For the Brownies
1 and 1/2 sticks of unsalted butter (12 tables), plus more for greasing the pan
2 cups of sugar
4 large eggs
1/2 cup of unsweetened cocoa powder
1 teaspoon of vanilla extract
1 and 1/4 cups of all-purpose flour
1 teaspoon of salt
1 cup of semi-sweet chocolate chips
For the Tiramisu layer
12-16 ladyfingers
1 cup of strong brewed coffee
2 tablespoons of unsweetened cocoa powder
8 ounces of mascarpone cheese
1/2 cup of granulated sugar
2 large egg yolks
1 teaspoon of vanilla extract
For the whipped cream
- cup of heavy cream
2 tablespoons of granulated sugar
· Instructions
1. Preheat and prepare the pan.
Preheat your oven to 350°F (180°C). Butter and line an 8-inch square baking pan with parchment paper.
2. Make the brownies
In a medium bowl, whisk together the flour, salt and cocoa powder. Set aside. In a large bowl, using an electric mixer beat together the butter and sugar until light and fluffy.
Add the eggs one at a time, then the vanilla. Mix in the flour mixture gradually, then stir in the chocolate chips. Spoon the batter into the prepared pan and smooth the top.
3. Bake the brownies
Bake the brownies for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs on it.
4. To make the Tiramisu layer
In a large bowl, whisk together the coffee and cocoa powder. Stir until the cocoa powder has dissolved. Quickly dip each ladyfinger in the coffee mixture, about 3-5 seconds per side. They’re supposed to be soft and pliable but dry, not too wet.
5. Assemble the Tiramisu layer
In a second big mixing bowl, add the mascarpone cheese, granulated sugar, egg yolks, and vanilla extract. Beat until smooth and creamy.
For the Tiramisu layer, layer ladyfingers at the bottom of a large serving dish. You might have to trim the ladyfingers to fit the dish. Spoon half the mascarpone mixture over the ladyfingers. Repeat the layers, starting with the ladyfingers, and then the mascarpone mixture.
6. Add the Tiramisu layer on top of the brownies
After the brownies cool completely, spread the Tiramisu layer on top of the brownies.
7. To make the whipped cream topping
In a large bowl, beat the heavy cream and granulated sugar until stiff peaks form. Cover the Tiramisu layer with the whipped cream.
8. Store and Serve Rewind
Refrigerate the Tiramisu Brownies for at least 3 hours or overnight. Slice into squares and serve.
Tips
- For better soaking of the ladyfingers, taste a few at a time, so they’re not unevenly soaked.
- Use espresso instead of brewed coffee, for a stronger flavor.
- Add a pinch of cocoa powder or powdered sugar over the whipped cream.
